Casabe with Cheese and Tomato
Ingredients:
- Dry cassava flour
- Salt to taste
- Grated or sliced cheese (mozzarella, costeño, or your choice)
- Tomato slices
- Dried oregano
Preparation:
- Heat a skillet over medium heat.
- Once hot, place a handful of cassava flour in a sifter.
- Sift it directly into the skillet, spreading into a thin layer.
- Sprinkle with salt to taste.
- The flour will start to compact into a white tortilla.
- When it holds together, carefully flip it.
- Cook 2 more minutes, then flip again.
- Add cheese and tomato slices on top.
- Sprinkle a bit more salt and oregano.
- Fold the tortilla like a large empanada.
- Let it cook a few more minutes until the cheese melts and the casabe becomes crispy.
Patarasca of Pirarucú
Ingredients:
- Pirarucú fillets (or a similar Amazonian fish)
- Salt to taste
- Chopped garlic
- Chopped onion
- Chopped cilantro
- Chopped bell pepper
- Banana or bijao leaves
- To serve: casabe, roasted ripe plantain, and white rice
Preparation:
- Place a layer of clean, flexible banana or bijao leaves (pass them over flame briefly if needed).
- Season the fish with salt, garlic, onion, cilantro, and bell pepper.
- Wrap the fish and vegetables tightly in the leaves to make a sealed package.
- Grill over charcoal or cook in a skillet over medium-low heat.
- The fish is ready when the package feels light — a sign it’s perfectly cooked.
- Serve with casabe, roasted ripe plantain, and white rice.
